Chopped vegetables must be freed from bitterness (solanine), which is also poisonous. To do this, sprinkle them with salt and leave for some time (0.5–1 hour) to drain. The second option is to soak in cold salted water. Before frying, the blue ones must be discarded in a colander or thoroughly dried with a paper towel, otherwise splashes will shoot throughout the kitchen.

You can prepare eggplants for fire in different ways.

  1. Don’t deviate from the classic recipe and fry it in a frying pan. When preparing snacks, this is the most time-consuming and labor-intensive part of the work. You need to fry over high heat, otherwise the vegetables will absorb too much oil, but make sure that the circles do not burn.
  2. Deep-fry the eggplants. The oil consumption will, of course, be significant, but the pieces of vegetables will turn out to be of a uniform golden color.
  3. Bake in the oven. The baking sheet is greased with a minimum amount of oil, the vegetables are laid out in one layer and placed in an oven preheated to 250⁰ C for 15 minutes.

Now the eggplants should be cut into slices half a centimeter thick. Place the chopped vegetable in a deep container and generously sprinkle with salt. Leave the eggplants in this state for two hours. During this time they will release dark-colored juice. Along with it, all the bitterness will go away from the eggplants. After this, we also pass them through a meat grinder. Pour the resulting mass into a saucepan and mix it thoroughly. Then we send the future sauce to boil on the stove. When the boiling process begins, you will need to add vinegar, and also salt to taste. After this, the sauce should simmer for another five minutes, after which it can be removed from the heat.

In order to start cooking, we need the following products:

  • 10 kilograms of eggplants;
  • 15 pieces of bell pepper;
  • 12 pieces of hot pepper;
  • 0.5 kilograms of garlic;
  • 2 kilograms of tomatoes;
  • 2 cups vegetable oil;
  • 2 cups vinegar;
  • Salt.

Wash the blue ones, remove the tails, cut them into half a centimeter thick circles. Place the chopped vegetables in a cup, add salt and forget about them for an hour. During this time, the blue ones should release juice.

  1. Wash the remaining vegetables, remove the seeds from the peppers, and cut them lengthwise into four pieces.
  2. Cut small tomatoes in half and peel the garlic.
  3. Twist the prepared vegetables.
  4. To boil eggplants, we need to boil 4 liters of water with 4 tablespoons of salt.
  5. Place the blue ones, washed from salt, into boiling water and cook for 5 minutes.
  6. Place in a bowl and cover with a lid.
