In this case, it is important to determine how long to cook the gherkin chicken before smoking in order to achieve the right balance between the required degree of readiness of the flesh and its elasticity.
Ingredients:
- chicken gherkins – 3 pcs.;
- salt – 30 g;
- pepper – 1 teaspoon;
- laurel – 2 pcs.;
- clove buds and allspice peas - 3 pcs.;
- garlic – 5 cloves;
- salt for cooking.
Preparation
- The chickens are rubbed with a mixture of salt and pepper and placed in a bag in the refrigerator for a day.
- Pour 3 liters of water into the pan, add salt to taste, add spices and garlic, boil for 3 minutes.
- Cool the brine to 80 degrees, add the chickens and reduce the heat to the maximum.
- The chicken is simmered at 60 degrees for 40 minutes, then dried and smoked at 90 degrees for 30 minutes.

Everyone knows small cucumbers called gherkins. Small broiler chickens have the same name. In English it sounds like Cornish hen, which means “Cornish hen”. Ingredients for 1 serving:
- chicken gherkin – 1 piece;
- potatoes - 2 medium-sized tubers;
- garlic – 2 cloves;
- vegetable oil – 1 teaspoon;
- lemon juice – ½ teaspoon;
- thyme – ½ teaspoon;
- salt - to taste.
The cooking process is quite simple.
- Rinse the gherkin, dry it and coat it with a marinade of vegetable oil, lemon juice, chopped garlic and salt. The chicken can be left to marinate in a cold place for several hours or baked immediately.
- Peel clean potatoes, cut into large slices and mix with a mixture of vegetable oil, salt and thyme.
- Place the potatoes on a greased baking sheet and place the chicken on top.
- Place the baking sheet in an oven preheated to 200 degrees.
- Bake for about 30 minutes. Checking the readiness of the meat is simple - just pierce the breast with a wooden skewer or a regular knife. If clear juice comes out, you can be sure that the dish is ready.
When the potatoes and chicken are ready, do not immediately remove them from the oven. It’s better to let them stand there for about 10 minutes. After that, you can serve them.
If desired, potatoes can be replaced with bell pepper. In this case, you will get a new dish, no less attractive than when combined with potatoes.
